Yes, but oddly enough, it would operate just as slowly as the real solar system.

The period of an orbit depends on the density of material within that orbit.

For example, a grain of sand would orbit a ball bearing just above its surface with a period of 90 minutes or so, the same as the period of a satellite in low earth orbit, because the ball bearing has about the same density as the Earth.

So if you made a model solar system, with the model planets having the same density as the real planets and separated proportionately to their diameters, it would all operate in real time --- the model Earth would go around the model Sun in a year, etc.

It's not clear you'd learn much. There are no surprises or unknown phenomena in "weak gravity". It's strong gravity that's hard. Now, if you had a mini black hole...
