For a solar cooker you want to deflect or concentrate the solar energy, and maybe focus it onto something that absorbs the energy to create heat.

To deflect, you need a reflective surface, something with low emissivity and high reflectivity.
To absorb you need a dark or rough surface, high emissivity, low reflectivity

I don't know if this is what your looking for but: I fly so you are aware of up drafts and down drafts. When I'm over brown dirt you can expect a updraft if the sun is shining on it. The jest is that the dirt absorbs the suns ray's and heats up more than, lets say green grass around it, this solar heating warms the air making it rise thus the updraft. This usually occurs over dark colours browns and blacks as asphalt.
